Suba Knives: Dedication to Craftsmanship
This knife series is made with the craftsmanship Steffen learned during his four years working with some of the best knife makers in Japan. He then brought this craftsmanship to Denmark, created a similar setup (the only one in Europe), and is extremely proud to present these knives to you! In short, Steffen and Suba Knives take craftsmanship seriously. This is not a knife series like many others “make,” where they buy mass-produced knives from huge factories in China and stamp their name on them. This is genuine craftsmanship, forged in Japan by people we are proud to call our friends, thinned, sharpened, polished, engraved in Denmark. Cool, right?

A fantastic petty knife for all the smaller tasks in the kitchen, whether it’s cutting smaller fruits and vegetables or trimming a tenderloin or similar. This knife is top notch! It works equally well whether you are working “in the air/by hand” or prefer to use it on a cutting board.
After a long and impatient wait, I am delighted to present Suba Knives’ own knife production. The first series is called Takumi and is made from Gin3 stainless steel. This is a fantastic steel that stays sharp for a long time. With its 1% carbon content, the steel is hard enough for many tasks in the kitchen, so the knife stays sharp for a long time without becoming brittle. Furthermore, Gin3 steel also contains 14% chromium. It is generally said that 13% and above means that the steel is stainless. In less technical terms, this means that your knife will stay sharp for a long time and will be rust-free under normal conditions.
I am in regular contact with the skilled blacksmiths in Japan who forge the raw steel for me, and they have experienced problems with the surface that was previously on this petty knife, so it now has a “cleaner” finish/surface, but the same fantastic cutting ability as before.
The Takumi series is based on our previous Nash series that was made totally in Japan, but Steffen has thinned the blades more than before so that they glide even more easily through the ingredients. Furthermore, the blades are also polished higher up so that they have an incredibly beautiful shine and an almost sparkling kasumi/bokashi finish between the core steel and the surrounding layers. Likewise, the back is rounded so that there is nothing to “gnaw” at.
We have lent the knives to a number of chefs and have been in the kitchen ourselves to thoroughly test the knives, so we know that they perform as we want them to.
It is important to note that none of our knives are dishwasher safe. They should also not be used to cut hard materials such as frozen foods or bones, as our knives are handmade and the handles are made from natural materials, which can cause variations in color and appearance.
