A fantastic Sujibiki (perhaps better known as a carving knife or slicer) that is a real pleasure to glide through potein such as fish and meat. The advantage is that it is relatively long and narrow, allowing you to use long strokes through the food for the cleanest and finest cut possible.
The core of this knife series consists of Ao-Super steel, also known as Blue-Super, one of the finest Japanese steel types. With a carbon content of 1.45%, the knife retains its sharpness for an incredibly long time. For extra protection, the blade is surrounded by stainless steel (cladding) and ground ultra-thin, so it cuts like a dream.
The knives are forged by Hiroki Kobayashi in Seki, Japan—a master craftsman I got to know during my years in Japan and whose craftsmanship I have always admired.
I usually polish and glass-blow my knives (kasumi or bokashi finish), but this series deserved something extraordinary. Therefore, the blade has been acid-etched, giving it a deep dark finish and highlighting the lamination line between the soft and hard steel. The result is a visual gem that really needs to be experienced in real life!
The handle is made of burnt oak (Baikoku) from Fukushima, Japan, and complements the dark blade beautifully. The octagonal design ensures a comfortable grip for both right- and left-handed users.
As the knives are handmade, there may be variations in color and wood structure. To maintain sharpness and longevity, they should not be used on frozen foods or bones and should never be placed in the dishwasher. With proper care, your Japanese knife will be a faithful companion in your kitchen for many years to come.
