A long time of hard work has finally paid off!
It took a lot of testing and effort before I was satisfied with the expression of these knives, but wow – I’m so happy and proud now. Made from Blue Super / Ao-Super steel with stainless cladding, you get a superb all-round gyuto that also has a truly unique appearance. This is a knife I won’t be making many of, so if you’re looking for something few others have, this is a perfect opportunity.

This series has been in my dreams for a long time. Suba AO-Super is an example of how it can take MANY attempts and A LOT of fine-tuning before I’m truly satisfied. But with persistence and some good friends in Denmark and Japan who were ready with a few solid tips, I have now finally managed to get the series exactly as I dreamed. Wow – I really think this new series turned out AMAZING!
This is not a series I will produce in large quantities, so there may very well be long periods where it’s sold out.
AO-Super is the name of the steel that forms the core of this knife series. AO-Super is also known as Blue Super and is an incredible steel type. It contains as much as 1.45% carbon, which gives it exceptional edge retention. This series features a stainless steel cladding around the core, and the grind is super thin – they slice like a dream.
The knives are forged by Hiroki Kobayashi in Seki, whom I got to know during my years in Japan, and I’ve always admired his outstanding craftsmanship.
Normally, when I produce in the workshop, I polish the knives and glass-bead blast them (a so-called kasumi or bokashi finish), but in this case, I felt something extraordinary was needed. So, I etched them, which gives the knife its dark appearance, and the lamination line – the transition from soft to hard steel – almost sparkles. They truly need to be seen in real life. A feast for the eyes!
The handles are made in Fukushima, Japan, from charred oak, also known as Baikoku, and I think it matches the dark blade incredibly well! The handle is octagonal, making it suitable for both right- and left-handed users.
Please note that our knives are handmade and may have variations in color and wood grain, and they should not be used on hard items such as frozen foods or bones.
