The blade is crafted from premium Japanese AUS-10 stainless steel, containing approximately 1% carbon. This steel is well known for its excellent sharpness, long-lasting edge retention, and outstanding corrosion resistance, making it an ideal choice for both home cooks and professional chefs.
Each blade features a beautiful Damascus finish that is acid-etched and then hand-polished in my workshop in Frederiksberg, Denmark. This process enhances the contrast of the Damascus pattern while giving every knife a unique, handcrafted appearance.
The elegant octagonal handle, made from Wenge and Rosewood, offers excellent comfort and control while complementing the knife’s timeless Japanese design.

Damascus, Damask, or Suminagashi—different names for the same decorative forging technique, where multiple layers of steel are combined to create the distinctive flowing pattern on the blade. A common misconception is that more layers automatically mean a better knife. In reality, this isn’t the case.
The layered steel is primarily aesthetic. Beyond a relatively small number of layers, additional layers add beauty rather than cutting performance. A great knife is defined by the quality of its steel, the forging process, the heat treatment, and the final sharpening—not by whether it has 33, 67, or 101 layers.
At the heart of the knife is Japanese AUS-10 stainless steel, containing approximately 1% carbon. This premium steel offers excellent sharpness, impressive edge retention, and outstanding corrosion resistance. It outperforms most standard stainless kitchen knives while remaining easy to maintain, making it an excellent choice for both enthusiastic home cooks and professionals.
The blade is forged by Kobayashi-san in Seki, Japan, but its journey doesn’t end there.
Once the blades arrive at my workshop in Frederiksberg, Denmark, every single one is individually thinned, polished, laser engraved, acid-etched, sharpened, and given a final quality inspection by hand.
The acid-etching process is what reveals the beautiful Damascus pattern and gives each blade its distinctive appearance. It’s a finishing process I personally carry out on every knife to achieve the look and quality I want every customer to receive.
The traditional octagonal handle is crafted from Wenge and Rosewood, providing excellent comfort, balance, and control. Every piece of wood is unique, meaning the grain and colour will naturally vary from knife to knife.
