Are you interested in learning about the fine details and techniques of Japanese kitchen knives and sharpening? Then this workshop is for you! You’ll have the opportunity to learn from an expert in the industry – Steffen, who is one of the few non-Japanese to have undergone sharpening training in Japan with Master Keiichi Fujii in Sakai and worked at the renowned knife shop and workshop Tower Knives Osaka.
He has over 10 years of experience in the knife industry in both Denmark and Japan, and has previously worked as a chef at some of Denmark’s best restaurants. During the workshop, you will get a thorough overview of Japanese knives, their history and the different types of steel.
Steffen will also teach you why some knives rust, why some don’t, why some stay sharp longer than others, and much more, giving you the tools to avoid mispurchases in the future and use your knives optimally. You’ll also get a sharpening lesson with a focus on double bevel, and Steffen will personally teach and correct each participant to achieve the best result.
You have the option to bring your own sharpening stones and knives, otherwise Suba Knives will provide. There will be ample opportunity to ask questions and explore your curiosity.
