The Debate: Handmade vs. Machine-Made Knives

There is an ongoing debate about which type of knife is better—and whether handmade knives are worth the extra cost. From the start, let me clarify that there is no definitive answer. In Japan, knife-making involves multiple specialized craftsmen, typically divided into three key roles: the blacksmith, the sharpener, and the handle maker. Each of these trades requires years of learning and mastery.

Is It Always Either/Or?
The process of making a knife involves several stages:

  • The blacksmith heats and shapes the steel, sometimes combining different metals to create layered patterns, then hardens and tempers the blade
  • The sharpener receives the blade, which at this stage is uniformly thick. They thin it to achieve the desired profile, polish it to the preferred finish, highlight patterns (such as Damascus), and finally sharpen the edge.
  • The handle maker crafts the handle, often from magnolia wood, shaping, burning, and drilling it to fit the tang of the knife. A ferrule—commonly made ofbuffalo horn—is added, and the handle is sanded, polished, and waxed. Finally, the blade and handle are assembled, usually by the sharpener or a sales company.

This is the traditional handmade process. However, machines can replace one or more of these steps without necessarily compromising quality. What it does affect is cost—machine-assisted production often results in more affordable knives. As with most handmade goods, the more time skilled craftsmen invest in a knife, the higher its price will be.

Personal Preference
In Japan, knifemakers frequently discuss this topic, but ultimately, whether handmade or machine-made knives are better comes down to personal preference. Personally, I value the craftsmanship and tradition behind handmade knives, so I choose to invest in them as much as my budget allows. By doing so, I support the artisans and help ensure these traditions continue for future generations.
