Few people think about it, but a sharp knife is not just about comfort in the kitchen – it is also about safety, precision and respect for the raw materials you work with. At Suba Knives, I offer professional knife sharpening, based on true Japanese craftsmanship. No sharpening machines. No quick fixes. But old-fashioned sharpening, as it is done in workshops in Japan.

The knife sharpening is carried out by me, Steffen, who has completed a four-year training in knife sharpening in Sakai, Osaka. I am one of only three non-Japanese who have this type of sharpening training, and have since worked side by side with some of Japan’s most skilled sharpeners and knifemakers. This also means that I have been contacted several times when other knife sharpeners have unfortunately ruined customers’ knives with incorrect angles or too rough sharpening methods.

Our workshop at Roskildevej 42b in Frederiksberg, Denmark is open almost every day from 10 AM – 6 PM. However, we occasionally attend events, so if you plan to visit at a specific time, we recommend contacting us in advance to ensure we’re available.

Learn to sharpen your own knives

At Suba Knives, we also offer hands-on sharpening courses, where you can learn the art of knife sharpening yourself. During the course, you’ll gain both theoretical and practical knowledge about sharpening techniques and proper use of whetstones.

We’ll guide you through each step of the sharpening process to ensure you achieve the best possible results. You’ll learn how to sharpen different types of knives, maintain them properly, and keep their edges razor-sharp for years to come.

Quality and integrity matter

At Suba Knives, it’s not about polishing knives to just make them look good – it’s about making them work as they should. This is knife sharpening as taught in Japan – and still practiced daily in the workshop. If you have questions about your knife, wonder if it can be “rescued”, or just want to know what’s possible – feel free to reach out.

The short answer: by hand, with patience. At Suba Knives, sharpening is done on large Japanese whetstones – heavy, imported stones from Japan. These are the same stones used in workshops in Sakai and other areas of Japan where some of the world’s best knives are made.

Each knife is assessed individually – there’s no single correct angle. The steel type, the knife’s purpose, and its current condition all determine how it should be sharpened. The process is fully manual – nothing goes through a machine. It’s all about the eye, the hand, and the experience.

It depends on how much and how you use them. A good Japanese kitchen knife used daily and treated properly usually needs sharpening every 6–12 months. A typical sign it’s time to sharpen: if the knife starts pressing rather than cutting – or if you feel you need more force than usual. 

Important: don’t experiment too much with knife sharpening at home without proper training and guidance. Many try to do it themselves – and using the wrong tools or techniques can cause more harm than good.

If you’re looking for knife sharpening in Copenhagen, you’re welcome to visit the workshop in Frederiksberg. There’s no machine production or “done in five minutes” promises here. It takes time – because it should be done right. I sharpen both Western and Japanese knives – but not bread knives, as they require a different approach that isn’t compatible with this workshop. Expect next-day turnaround, and you’ll receive a text when your knives are ready.

When delivering knives for sharpening, make sure they’re safely wrapped – both for your safety and in compliance with knife laws. 

An easy solution is to wrap each knife in newspaper and secure with rubber bands so the blade can’t slip out. Then place them all in a plastic bag, cloth bag, or tote. If you’re driving, put them in a secure place like the trunk. If you’re walking or biking, a backpack works fine as long as the knives are well packed.

That way, you avoid accidents and misunderstandings – and it makes getting your knives sharpened safer and easier.
