Santoku vs. Gyuto (Chef’s Knife)
If you’re looking for a versatile knife that can handle vegetables, fish, and meat, a Santoku or a Gyuto (chef’s knife) is an excellent choice. The decision between the two comes down to personal preference:

  • Santoku Knife: A favorite among home cooks, the Santoku is typically 3-4 cm shorter than a Gyuto, making it easier to maneuver—especially in smaller kitchens. It has a rounded tip and excels in precise slicing, dicing, and chopping.
  • Gyuto (Chef’s Knife): A slightly larger all-purpose knife. Due to its greater length, it’s excellent for slicing larger cuts of meat, but some may find it more challenging to handle, particularly if they are less experienced in the kitchen.

Petty – The Small, All-Round Knife
If you need a smaller multi-purpose knife, the Petty knife is a great choice. Ranging from 130-150 mm, it’s ideal for fine chopping, herb preparation, vegetable cutting, meat trimming, and even filleting fish.
Sujihiki (Slicer) – The Precision Cutter
Looking for the perfect knife to slice roasts, fish, or other proteins? A Sujihiki (Slicer) is the ideal tool. With its long, thin, and narrow blade, it ensures smooth, clean cuts without tearing delicate meats. By using long strokes, you maximize the blade’s length for precise and effortless slicing.

Choosing the Right Handle Shape
